This AI gingerbread christmas cake smells quite good. Might have some with Lankanto diabetic maple syrup in a minute. Just got to turn it out onto the wire cooling rack first
@TAB Hows your mouth going, are you ok? My cake turned out well for an AI recipe but I had to double the ingredients listed. Very Christmasy. Probably could have done with some no egg replacement instead of flaxseed meal as egg substitute or possibly home made applesauce to bind it together a bit better. Applesauce is a good egg replacement but wasn't mentioned in recipe. It wouldn't rise much as theres no gluten but I think AI came up with a good recipe, could be perfected a bit better. Goes well with diabetic maple syrup. No sacrifice on taste I noticed for a low carb recipe. Could be served with pomegranate arils on top. Glad I gave it a go, will have more to eat tomorrow! I used monkfruit sugar which is diabetic friendly so no blood sugar spike. Have been enjoying my flavoured DASH sparkling water this xmas
